How we met – Notre RencontreFeatured

Twenty-three years old and in my last year of business school I went on a study exchange to a university in Nice, France. I had visited Nice while backpacking through Europe with a friend of mine and had immediately known that I wanted to go back.

Only a few weeks into my exchange, the professor of one of our classes proposed to bring us to do a live study on a local business, a 5 star hotel just outside of Cannes. “Would any students be interested in doing an audit of this hotel in exchange for a night at the hotel?” Ummmm , YES!!!!

24 Hours in Nice, France

To say that Le Chef and I love Nice is an understatement. Nice is us. We lived here as a couple and celebrated our civil wedding ceremony in the Vieux Nice. Nice deserves at least 3 days (or 3 years, truly) but because Le Chef’s family lives in Toulon, now we often only get to spend 24 hours. We land in Nice after a red eye flight blurry from the lack of sleep but the sight of the coastline as we land is enough to revive us. We will catch up on sleep when we get to Mamie’s house. First, we explore the city we love so dearly.

Taboulé Du Marché – Market Taboulé Salad

Taboulé is a summer salad that is synonymous with eating on the go or “sur le pouce” in France. When I was working in Nice, my colleagues and I would take our containers of homemade or store bought Taboulé down to the famous blue chairs that lined the Promenade des Anglais. We would slip off our high heels and prop our feet up against the railing, overlooking the sea. Conversations ebbed and flowed around mouthfuls of this zesty salad. The hour long lunch break was the most delicious time of the day and this light, refreshing dish was the perfect one-plate meal.

Le Chef’s Wife Bolognaise Recipe

Le Chef’s Favorite Spaghetti Bolognaise

This is one of Le Chef’s all time favorite meals. He loves it so much that it has become our Sunday night ritual.

I open a bottle of red wine ( likely a Bordeaux or a rich Bandol), pour each of us a glass and start cooking as Le Chef winds down from his Sunday brunch service and we talk about our day and the week ahead. I chop carrots, onions, and garlic as I put the pasta water to boil. I add another little sauce pan onto the stove to boil water for our daughter’s carrots. I brown meat in our Le Creuset Flame Cocotte and savor the smell of garlic & onions in the pan before adding a splash of my wine to deglaze the pan. I know these movements by heart, they are almost therapeutic to me. I sip my wine and turn to my husband. “Quel fromage tu prèferes, mon amour?” There is always a selection of cheeses in our fridge. Would Le Chef prefer Parmesan, Gruyere or Mozzarella on his Spaghetti Bolognaise? More than the enjoyment of a good meal, it is the ritual of the preparation that is so important to us. There is a sense of occasion around our Sunday night Bolognaise which far outweighs the nobility of the dish and yet, it is its rustic simplicity that makes it all that more appealing.
