- Skinless chicken thighs - White onion - Garlic cloves - Red pepper - Fresh tomatoes - Black olives - Olive oil - Chicken stock - Orzo - Mozzarella ball - Garni - Basil
Preheat oven to 350 degrees. Chop the onions, garlic, peppers and tomatoes. Trim the chicken thighs.
Over medium heat, drizzle olive oil into a dutch oven or oven safe pan. Add the chicken thighs & allow to sear for 3 minutes on each side.
Flip over the chicken thighs and sear for another 3 minutes. Remove the chicken thighs from the pot and set aside.
Add the chopped garlic, onions and red pepper into the pot. Using a rubber spatula scrape the bottom of the pot to get all the flavorful brown bits into the onions, garlic and red pepper mixture.
