Endive Salad with Pears, Blue Cheese & Walnuts

4 Belgian endives
2 pears
½ cup blue cheese
1/4 cup walnuts
Dressing
3 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp Dijon mustard
1 tbsp fresh lemon juice
flaky French sea salt
Black pepper
Instructions
- Separate the endive leaves and arrange on a platter.
- Slice pears and add to the salad.
- Top with blue cheese and toasted walnuts.
- Whisk dressing ingredients together.
- Drizzle dressing over salad and garnish with fresh herbs and black pepper.
- Serve immediately.
