The first time I ever made this Healthy 3 Bean Turkey Chili I was surprised at just how easy it was. With just 10 minutes of prep time you can have a big pot of fragrant Chili bubbling away on the stove.
I have tried several different types of Chili but I keep coming back to this recipe. It is so simple to make but yet so satisfying. Le Chef loves it! Chili also keeps very well in the freezer. You can see why it has become a frequent part of my beloved freezer meal rotation!
Equipment needed:
I like to make my chili in a heavy bottom pot, such as a cast iron Le Creuset
Your can opener will get a fair bit of use! You can choose to use dry beans for this recipe instead, however, I would then suggest pre-soaking the beans over night and then upping the cooking time to about an hour.
Healthy 3 Bean Turkey Chili ingredients
1 lb Ground Turkey
2 cloves of garlic, chopped
½ yellow onion, diced
1 28 oz can diced tomatoes
1 15.5 oz can crushed tomatoes
3 15.5 oz cans of Kidney beans, drained
1 15.5oz can Pinto beans, drained
2 15.5 oz cans of black beans, drained
1 teaspoon chili flakes
1 tsp cumin seeds
2 tsp Chili powder
1 tbsp olive oil
salt & pepper to taste
How to make Healthy 3 Bean Turkey Chili:
Heat the olive oil on medium high heat in a large pot.
Add in the onion and garlic together with the chili powder and cumin seeds. Stir frequently with a wooden spoon until the onions become translucent and the spices are nicely roasted. This is key for getting lots of flavor!
Add in the turkey meat. Use your spoon to break up the turkey meat into little pieces. Stir frequently until the meat is browned.
Add the diced tomatoes and the crushed tomatoes. Stir. Sprinkle in the chili flakes.
Add in the kidney beans, the black beans and the pinto beans.
Wait until Chili comes back to a simmer. Reduce heat to medium low and cover.
Allow to simmer for 30 minutes stirring frequently.
Season with salt and pepper to taste.
I like to serve this Chili as a healthy meal-in-a-bowl on its own or else accompanied with a grilled quesadilla.

Notes
This Chili freezes very well. I like to portion it into individual containers to pull out of the freezer when I need a quick, healthy meal.
