French Spring Recipes: Fresh, Elegant Dishes to Welcome the Season
The arrival of spring is one of my favorite moments in the kitchen. After the cozy comfort of winter stews, soups and braises, Farmer's markets suddenly fill with fresh produce, fragrant herbs, and the first tender vegetables of the season. It is the moment when French home cooking shifts from rich and hearty to bright, vibrant, and full of life. Here are 25 Easy French Recipes to bring spring into your kitchen.

J'Adore! Would you like to save this recipe?
Growing up in the South of France, my husband learned that spring cooking is all about simplicity. A drizzle of olive oil, a handful of herbs, and the natural beauty of seasonal ingredients are often all you need. For home cooks, this is wonderful news. French food does not have to be complicated. In fact, many of the most beloved classics of French cuisine are incredibly approachable when you focus on good ingredients and simple technique.
Below you will find some of my favorite French spring recipes published on Le Chef's Wife. These French dishes are perfect for everything from a relaxed cozy family dinner to an elegant dinner party or special occasion. Think colorful salads, flavorful vegetables, light seafood, and a few comforting classics that still feel right as the weather warms.

Salade Niรงoise: The Ultimate French Spring Salad
One of the most iconic French recipes for spring (the moment the fresh tomatoes start to appear) is salade niรงoise, a beautiful dish that captures the flavors of the Mediterranean.
This refreshing yet filling salad is a vibrant mix of vegetables, seafood, and bright flavors. The traditional version includes tender tuna chunks, hard-boiled eggs, green beans, juicytomatoes, briny olives, and crisp lettuce. Everything is lightly dressed with olive oil and basil vinaigrette.
At home, I love serving it room temperature on a large platter for a grand spread when entertaining. It is both elegant and relaxed, which is exactly what spring entertaining should feel like.
This salad is full of the delightful Mediterranean flavors of the French Riviera.
If you are planning a dinner party, a large salade niรงoise is a beautiful main course that feels impressive but comes together easily.

Asparagus Soup: A Celebration of Asparagus Season
Nothing signals the arrival of spring quite like asparagus season. When asparagus is fresh and tender, it becomes the star of simple and elegant French dishes.
A silky asparagus soup is one of my favorite ways to celebrate the season. Made with fresh asparagus, sautรฉed shallots, and just a touch of cream, it is delicate, fragrant, and deeply satisfying.

French cooks often finish the soup with a swirl of cream or a drizzle of olive oil, along with a sprinkle of fresh herbs. Served with crusty bread, (you will love my quick and easy French Baguette recipe) it becomes a simple yet elegant meal.
This soup is perfect as a side dish for a larger meal or as a light starter before a main course. It is also a wonderful way to showcase spring produce without much effort.
For busy home cooks, it is proof that French cooking can be both refined and easy.

Croque Madame: The Ultimate French Cheese Sandwich

When spring days are still a little cool, a warm croque madame (or croque monsieur) is exactly what you need.
This beloved cheese sandwich is made with savory ham, creamy bรฉchamel, and plenty of gooey cheese, all toasted between slices of crusty bread and topped with a runny egg. The result is golden, crispy, and deeply satisfying.
For many French families, croque madame is a beloved childhood favorite and the perfect solution for a quick lunch or cozy family dinner.
While it may seem simple, the secret to a great croque is quality ingredients and plenty of butter in the pan so the bread becomes beautifully crisp.
Serve it with a bright green salad dressed in a sprightly French vinaigrette or a simple side of vegetables to balance the richness.
Spring Strawberries with Chantilly Cream

Spring in France also means the exciting return of berries. When the first fresh strawberries appear at the market, there are literal festivals in their honor. One bite of a gariguette strawberry in peak season and you will understand why!
One of my most memorable dining experiences ever was at La Petite Maison in Nice (when La Patronne, Nicole, was still welcoming guests at the door) and the dessert was a big bowl of freshly picked Gariguette strawberries, with the stems still on, served next to a bowl of perfectly unctuous chantilly cream. Oh la la!
Take fresh strawberries and whip up a batch of Chantilly Cream. So simple and truly the perfect desert.
The result is light, fragrant, and perfect after a rich meal. It is also a lovely ending to a spring dinner party.
You can also serve the chantilly cream and strawberries over crรจpes for a decadent weekend brunch.
Cozy Classics That Still Belong in Spring

While spring cooking celebrates freshness, there is still room for comforting French food on cool evenings.
A lighter version of beef bourguignon, la Daube Provenรงal, or coq au vin blanc dishes, served with herbs and seasonal vegetables, can still feel appropriate in spring. The trick is to pair them with lighter sides and fresh salads.
Even classics like french onion soup, topped with bubbling gooey cheese, can feel right when served in smaller portions as a starter.
After all, the goal of french home cooking is balance.
