What Makes a Recipe โClassicโ in French Cooking?
French cuisine is steeped in tradition. A โclassicโ recipe is one that has stood the test of time, passed down from generation to generation, and often appears on menus from Paris to Provence. Dishes like Boeuf Bourguignon, Coq au Vin, and Ratatouille arenโt just deliciousโthey tell the story of French culture, geography, and family life. They celebrate seasonal ingredients, simple techniques, and the joy of lingering over a meal.
The best part? These recipes are not nearly as intimidating as they may seem. With step-by-step instructions and a few helpful tips, a home cook can master these recipes in their own kitchen and impress their guests on special occasions without stress.
The Perfect Start: Entrรฉes and Soups
French dinners often begin with an entrรฉe, or starter. Rather than overwhelming the table with too many dishes at once, the French prefer to savor each course in sequence. Here are a few classic French appetizers youโll want to try:
French Onion Soup โ Perhaps the most iconic of all French soups, made with caramelized onions, a splash of wine, and topped with melty cheese (Gruyรจre and Comtรฉ please!) over toasted baguette. Itโs rustic, comforting, and absolutely irresistible on a cold evening.
La Salade Niรงoise โ My favorite French salad from the South of France that combines tuna, olives, hard-boiled eggs, and fresh vegetables. Light but satisfying, itโs a classic dish that brings sunshine to the table.
French Vegetable Soup (Potage aux Lรฉgumes) โ A staple in French homes, this soup is a warm and nourishing way to begin a meal, showcasing the simplicity of seasonal vegetables.
These recipes set the tone for a memorable mealโsimple, flavorful, and distinctly French. I wrote an entire post about Cozy French Soups and Stews that you will enjoy as well.
French onion Soup
The Heart of the Meal: Classic French Main Dishes
When it comes to classic French main courses, the possibilities are endless, but a few dishes stand out as true icons of French cuisine.
Coq au Vin โ Chicken slowly braised in red wine with mushrooms, pearl onions, and smoky lardons. The flavors meld together into a sauce so delicious youโll want to mop up every drop with bread. For a lighter twist, try Coq au Vin Blanc, which uses a white wine sauce for a fragrant, delicate finish.
Beef Bourguignon โ Made famous by Julia Child and Jacques Pรฉpin, this slow-cooked beef stew from Burgundy is the definition of comfort food. Tender meat, red wine, and herbs come together in a rich sauce that tastes even better the next day.
La Daube Provenรงale โ A Provenรงal cousin of Boeuf Bourguignon, flavored with olives and orange zest. Traditionally served over pasta, itโs hearty and fragrant with the sunny flavors of Southern France.
Poulet Rรดti โ Roast chicken is the ultimate French family meal. My recipe for Lemon Thyme Roast Chicken with tender potatoes is both simple and spectacular, perfect for Sunday dinner or meal prep for the week ahead.
Branzino with Vierge Sauce โ French cooking isnโt all about meats and stews. This Mediterranean fish dish is quick to prepare and full of fresh, vibrant flavors thanks to a Provenรงal vinaigrette with tomatoes, olives, and basil.
Magret de Canard- Duck meat is very popular in france and one taste will tell you why! The sweetness of the roasted apples and squash marry perfectly with the duck.
Scallops with Leek Fondue โ Seared, decadent scallops served with creamy leeks. Simple, yet elegant.
Each of these main courses represents a different region of France, yet they all share the hallmarks of French cooking: quality ingredients, slow cooking, and layering of flavors. Serve with french bread on the side to sop up the delicious sauce left on the plate. In France, "il faut saucer!"
Sur le pouce (on the go!)
French people are famous for not snacking - they have set meal times and usually don't eat outside of them. It is rare to see a French person eating a snack while walking the streets of Paris!
But there are some foods that are famously eaten on the go or in more casual settings.
No French meal is complete without bread. A warm, crusty Homemade Baguette on the table is a showstopper that pairs beautifully with any of the dishes above. My easy two-hour french baguette recipe proves that you donโt need a boulangerie to achieve bakery-quality results.
Or, if you want something sweet, pair your meal with crรจme brรปlรฉe, mousse au chocolat. These recipes are elegant yet easy, the perfect way to end a meal ร la franรงaise. For more seasoned cooks - a soufflรฉ or a moelleux au chocolat are show stopper desserts.
Tips for Success with Classic French Recipes
Use quality ingredients. French cuisine is all about letting good ingredients shine. Choose fresh vegetables, good wine, and high-quality butter.
Take your time. Many classics, like Beef Bourguignon, are best cooked low and slow. Donโt rush the process.
Serve in courses. Create the French experience at home by serving dishes one at a time and savoring the moment.
Keep it simple - French dishes are traditionally under spiced - they like to let the flavor of the ingredients shine. Do not hesitate to serve some dijon mustard on the side and flaky French sea salt to finish.
Pair with wine. A simple Burgundy Pinot Noir with Coq au Vin, or a crisp Provenรงal Rosรฉ with Branzino, elevates the experience.
Bringing France to Your Table
Cooking classic French recipes at home is about more than just foodโitโs about creating atmosphere, tradition, and joy. Light a candle, pour a glass of wine, and let yourself be transported to a cozy bistro in Paris or a sunny terrace in Provence. With these recipes, youโll see that French cooking doesnโt need to be complicated. Itโs about simple techniques, quality ingredients, and a love of sharing meals.
Whether you choose to make a full French dinner menu or simply roast a chicken with thyme and lemon, these dishes are a wonderful way to bring a little French magic into your everyday life.

Coq Au Vin Blanc is a French recipe for a succulent chicken stew made with white wine.

An iconic French Dish. Chicken that is seared, then braised in a rich red wine sauce that infuses it with so much flavor, you will say, "mmmmm" with every bite. Pearl onions, bacon and mushrooms add a level of flavor complexity, you won't believe you made this dish yourself!
This Beef Bourguignon, or "Boeuf Bourguignon" dish is one of the grand classics of French Cuisine, for good reason. Tender chunks of braised beef that melt in your mouth. A rich, winey sauce that envelops the beef and the supple vegetables. A dish you can't resist saying "yum" after just one bite - just like in one of my favorite movies, Julie & Julia.
