Fall in the South of France is wonderful. The days are bright and sunny yet the evenings bring a slight chill that makes you want to cozy in with a fragrant, warm dish. The markets abound with such incredible produce. Fresh figs! Apples! Pears! The last of the eggplant and summer squash converge with butternut squash and pumpkin. Fresh herbs are used on everything.
