Why Gluten-free French Recipes?

My husband, Le Chef, a man who has eaten a baguette and a croissant (or two!) a day since he was born, was recently diagnosed celiac. Through this process we have had to re-examine all of our habits and learn new ways to shop, cook, and navigate eating out.
I don't have all the answers yet. Yes, I am working on a gluten-free version of my popular baguette recipe but it is not ready to share yet. My attempt at gluten-free crรชpes last Sunday was a disaster (no, 1-for-1 gluten-free flours are not quite the same, whatever the package may say), but I am working on it. In the meantime, we are cooking naturally gluten-free foods at home. Foods that bring comfort and joy and don't feel like a second rate substitute for something he loves.

We are navigating what it means to be a celiac household and also what it means to go out to dinner (our favorite thing in the world to do) when you can't eat most of what is on the menu and are fearful for cross-contamination. He is navigating what it means to be a celiac chef at the helm of a French Restaurant.
While it is easy to fixate on what we have lost, it is also incredible to see what we have gained. Since he gave up gluten my husband truly looks and feels 10 years younger. I wish we could all find the boundless energy and vitality that he has discovered in his mid-forties.

Gluten-free French Dinner Menu

If you are inviting friends over for dinner and are not familiar with gluten-free cooking, my suggestion is to keep things simple. Just the fact that you are cooking for them will make them so happy.
I would recommend laying out some cruditรฉs and olive tapenade to start.
Starter: I love to make ahead a soup such as Potage aux Lรฉgumes or Creamy Butternut Squash Soup with Crispy Sage. A Salad such as the Fig and Goat Cheese Salad is always a favorite as well.
Main Course: Roast Chicken is my go-to however this Mediterranean Salmon is really simple and tasty. Serve with sides such as mini roasted potatoes and a simple green salad.
Dessert: I love fresh seasonal fruits served with Chantilly cream or a mousse au chocolat that I can make the day before.
