What Is French Riviera Roast Chicken?
French Riviera roast chicken is a citrusy and bright roast chicken inspired by the cuisine of southern France. Unlike classic northern French roast chicken recipes that often rely on butter and rich sauces, Riviera cooking emphasizes olive oil, fresh herbs, garlic, lemons, vegetables, and simple preparation.
This style of cooking is common along the Cรดte d'Azur, the Mediterranean coastline of France from Menton and Monaco to Marseille.
I lived in Nice during my 20s and learned many of these cooking traditions through my husband, Sรฉbastien, who grew up in Toulon on the French Mediterranean coast. This recipe reflects the flavors commonly found in family kitchens throughout the region. You can learn more about our story here.
