The cuisine of the French Riviera is something entirely different.
Stretching along the Mediterranean coast from Menton to Saint-Tropez, the French Riviera, or Cรดte d'Azur, is home to a style of cooking that is lighter, brighter, and deeply connected to the sea. Olive oil replaces butter. Fresh vegetables take center stage. Herbs grow wild in the hillsides (la garrigue). Seafood arrives daily from local fishing boats.

It is a cuisine shaped by sunshine.
After living on the French Riviera for eight years and returning countless times since to visit friends and family, I have come to believe that Riviera cuisine represents some of the most approachable and delicious food in all of France.
It is also the style of cooking that most influences the recipes I share here on Le Chef's Wife.
Why I Love French Riviera Cuisine

My connection to French Riviera cuisine is deeply personal.
I first arrived in Nice as a university exchange student and quickly fell in love with the culture, the lifestyle, and, of course, the food. While studying there, I met my husband, Sรฉbastien, a French chef from Toulon who was then Executive Chef of a five-star hotel outside Cannes. We were engaged just a few months later, and I never returned home.
We were married in Nice and spent nearly a decade living on the Cรดte d'Azur. During that time, I worked in luxury hospitality in Antibes, Nice, and Monaco, helping curate exceptional experiences for travelers visiting one of the world's most celebrated destinations.

As part of the Riviera's culinary community, our friends were chefs, vintners, olive oil producers, fishermen, and fresh fruit and vegetable purveyors. Weekends were spent exploring village markets, sharing long lunches overlooking the Mediterranean, and discovering the traditions that make the cuisine of the South of France so special.
Those years gave me a front-row seat to one of the world's great culinary regions and shaped the way I cook to this day. Even after moving to North America to pursue our careers, the flavors, ingredients, and philosophy of French Riviera cooking remained at the center of our family table.
Today, through Le Chef's Wife, I share the recipes, traditions, and entertaining style that I learned while living on the Cรดte d'Azur. I am also honored to serve as an official Ambassador of the Cรดte d'Azur, helping introduce others to the culture, cuisine, and art de vivre of this extraordinary region.

What Is French Riviera Cuisine?
French Riviera cuisine is a style of Mediterranean cooking found along the southeastern coast of France.
The cuisine reflects centuries of influence from:
- Provence
- Italy
- Monaco
- the Mediterranean Sea

Unlike the rich dishes of Burgundy or Normandy, French Riviera food emphasizes:
- olive oil
- fresh vegetables
- seafood
- herbs
- citrus
- simple preparations
The goal is not to transform ingredients.
The goal is to celebrate them.
A perfectly ripe tomato, a drizzle of olive oil, a few basil leaves, and flaky sea salt are often all that is needed. A classical representation of the Mediterranean diet.

What Makes French Riviera Cuisine Different From Other French Food?
One of the biggest surprises for visitors is how healthy and vegetable-forward Riviera cooking can be.
While Northern French cuisine often relies on:
- cream
- butter
- cheese
- slow braises

Mediterranean French cuisine focuses on:
- tomatoes
- zucchini
- eggplant
- peppers
- olives
- seafood
- fresh herbs
- olive oil
This connection to seasonal produce gives French Riviera recipes their distinctive freshness.

FREQUENTLY ASKED QUESTIONS

They are closely related and deeply overlapping. Provence and the Cรดte d'Azur share many ingredients, techniques, and traditions. The Riviera cooking tends to have a slightly stronger Italian and Mediterranean influence, particularly around Nice (which was part of Italy until 1860), while inland Provence is more known for its game, lamb, and truffle dishes. In practice, the two cuisines share far more than they differ, and many dishes (ratatouille, petits farcis, soupe au pistou, daube) belong to both.
Genuinely and naturally, yes. It is built on olive oil, vegetables, seafood, and fresh herbs, the core of the Mediterranean diet, which is consistently recognized as one of the healthiest ways to eat in the world. Many dishes are naturally gluten-free and dairy-light, not as a compromise, but because that is simply how they have always been made.
Provenรงal rosรฉ is the obvious and perfect answer for almost everything. For fish and lighter dishes, a white from Cassis or Bandol is wonderful. For the more robust dishes such as a daube, ratatouille, a slow braise, reach for a red from Bandol or the Rhรดne Valley. And for arrivals and celebrations: always Champagne.
Look for a single-origin extra virgin olive oil from France, Italy, Spain, or Greece. The French olive oils from the Baux-de-Provence region are extraordinary if you can find them. At a minimum, choose a cold-pressed extra virgin olive oil with a harvest date on the label and use it generously, this is not the place for economy.
Absolutely. Many of the most iconic Riviera dishes, ratatouille, soupe au pistou, tian provenรงal, are entirely vegetable-based and require no seafood at all. And where seafood is called for, the preparation is usually simple enough that good-quality fresh fish from any good fishmonger or well-stocked supermarket will produce a beautiful result.

The Essential Ingredients of French Riviera Cuisine
Olive Oil
If there is one ingredient that defines the French Riviera, it is olive oil.
Used in cooking, dressings, marinades, and finishing dishes, olive oil forms the foundation of Mediterranean French cuisine.
Tomatoes
From salads to sauces to tarts, tomatoes appear everywhere during the summer months.
The best Riviera recipes allow tomatoes to shine with very little intervention.
Herbs de Provence
Fresh thyme, rosemary, basil, oregano, and savory are staples of Southern French cooking.
These herbs bring fragrance and depth without overwhelming the ingredients.
Seafood
Living beside the Mediterranean means seafood plays a central role.
Common ingredients include:
- sea bass

Classic French Riviera Dishes

Salade Niรงoise
Perhaps the most famous Riviera dish, Salade Niรงoise originated in Nice.
Made with tomatoes, tuna, hard-boiled eggs, olives, anchovies, and seasonal vegetables, it captures the essence of Mediterranean cooking. It is common in the US (and quite often in France too!) to see green beans and potatoes added to La Niรงoise, but the authentic version uses only raw, seasonal vegetables with lots of market fresh tomatoes.
Pissaladiรจre
Often described as the Riviera's answer to pizza, this onion tart is topped with caramelized onions, anchovies, and olives.
Ratatouille

This beloved vegetable dish combines zucchini, eggplant, peppers, tomatoes, onions, and olive oil.
Simple ingredients become something extraordinary when cooked with care. Ratatouille is a great French side dish to serve with Steak, lamb or roast chicken.
Pan Bagnat
This sandwich from Nice contains many of the ingredients found in a Salade Niรงoise, pressed into a crusty round loaf.
It is the perfect Riviera picnic lunch.
Sauce Vierge
One of my favorite Riviera sauces, sauce vierge combines tomatoes, olive oil, fresh herbs, lemon, and shallots.
Served over fish, it embodies everything I love about French Riviera cuisine: fresh ingredients, simplicity, and incredible flavor. I also love to serve it over grilled chicken in the summer.

Soupe au Pistou
A Provenรงal vegetable soup finished with a basil and garlic pistou sauce.
It is one of the most comforting dishes of the region and a beloved dish that my late grandmother in law would make for us. Her Soupe au Pistou was the best and I am so honored that she shared her recipe with me.
